How are your lists different from the big publications?

We keep lists short — usually seven picks, never twenty-five — and every entry includes the dish to order, the realistic price of dinner for two, and how hard the reservation actually is this month.

How often are lists updated?

Each list carries a 'last verified' date. When a chef leaves, prices jump, or a kitchen slips, the list changes — we don't let a 2024 opinion wear a 2026 headline.

Why isn't [famous restaurant] on the list?

Either we haven't re-verified it recently, or we ate there and it didn't earn a slot. Fame isn't a criterion; what's on the plate is.

Do you rank by cuisine region?

Yes — we split Northern, Roman, Southern, and Sicilian traditions into their own lists where it matters, because comparing cacio e pepe to osso buco helps no one.

What does dinner for two cost at the restaurants on these lists?

We publish the real number on every pick. Across current lists it runs about $90 to $140 for two with a shared appetizer, two pastas, and a glass of wine each; the Northern and tasting-menu picks run higher, and the Roman and Sicilian lists include several genuinely good rooms under $70 for two.

Which Italian regions do New York restaurants actually cook?

Four traditions dominate here and we list them separately: Roman (cacio e pepe, carbonara, artichokes), Southern and Neapolitan (long-cooked sauces, pizza), Sicilian (seafood, sweet-sour, breadcrumbs), and Northern (butter, risotto, braises). Comparing them on one list flattens the differences that matter.
